At our state fair they have/had Deep Fried Butter! They basically take cubes from a stick of butter and roll it in breading/coating of some kind, then freeze it. Then they dump it in the deep fryer. Supposedly it is really good.

Check out Quesadilla Junction. Oliver Regal, owner, has an awesome product. His food stand at the Welcome to the Minnesota State Fair is located at the top of the hill next to the pet center.

I have been to enough fairs and heard his rant. The boss would not put up with anyone acting out as this article states. Since I am not allowed to interview the carnival workers anymore I may never get the whole story.

This is her third year working at the fair. She is a pharmacy student. Her main job this year was to assist in getting me refreshments for my snacks.

CHOCOLATE COVERED BACON

There are two things I would do different. One, use an enrobing chocolate. They used some kind of chocolate sauce. Two, I would use a better quality bacon. Theirs was not too bad, but it needed more smokiness and salt.
